ALMOST NO CARBS and a WHOPPING 35 grams of PROTEIN!
Okay okay, the "ZERO Carb waffles", actually have 2 net grams of carbs, but that's pretty close to ZERO. And technically you could find a protein powder with zero carbs to make them truly carb-free. However, I recommend following the recipe exactly.
The absolute truth is that these low-carb protein waffles taste amazing! I am what you might call a "kitchen experimenter". I have been perfecting this recipe for a while now and I eat these at least once a week. They are super easy to make, and just use normal ingredients, nothing fancy. I actually got all of my ingredients from Trader Joe's, but that's just because its close by.
Here is what you will need:
1 Scoop MetRx Vanilla Protein Powder (available at Trader Joe's) This is key, I tried about 15 different varieties of protein and found this one worked the best.
2 Large Eggs - I always prefer cage free
Organic Cinnamon - Just a couple shakes - no need to measure this. I like a lot more cinnamon than most people.
1 tsp Vanilla Extract / Flavoring -
(You can also add just a touch of almond extract or maple extract)
A Pinch of Sea Salt - I prefer Pink Himalayan
2 TBS Water - the consistency should resemble normal waffle batter with the correct amount of water
Coconut Oil Non-Stick Spray - For the waffle maker
You can also add a teaspoon of Coconut Oil to the recipe to make them more moist if desired.
Now just stir it up with a fork until it smooth then pour into your waffle maker. Make sure to spray it with a non-stick spray first.
Top with fruit, greek yogurt, grass fed butter, etc..

Makes 2 small waffles or 1 large
FAT: 11 grams
CARBOHYDRATES: 3 grams
FIBER: 1 gram
PROTEIN: A whopping 35 grams!
SUGAR: 1 gram
