These low-carb high-protein pancakes are gluten-free, sugar-free, and guilt-free, but definitely not taste-free.

Since our ZERO-Carb waffle recipe got so much love we decided to share our low-carb pancake recipe as well. They are super easy to make and taste almost as good as the real thing.

Here is what you will need:

1 Scoop MetRx Vanilla Protein Powder (available at Trader Joe's)
2 Large Eggs - I always prefer cage free
A pinch of Organic Cinnamon - Just a couple shakes
1 tsp Vanilla Extract / Flavoring
A Pinch of Sea Salt - I prefer Pink Himalayan
A pinch of Baking powder
1 TBS Coconut Flour or PB2 (this is optional, but gives a texture more like real pancakes)
1/4 Cup Water - the consistency should resemble normal pancake batter.
Coconut Oil Non-Stick Spray
 

DIRECTIONS:
Stir all ingredients up with a fork until it smooth then pour into your pan. Make sure to spray it with a non-stick spray first.
Cook about 1 minute on each side. They don't bubble like normal pancakes so make sure to check the bottom to see if its golden so you don't burn them.


Top with fruit, greek yogurt, grass fed butter, etc..
